  • 1/4 cup Greek yogurt for tanginess (60 g)
  • 1/2 cup roasted red peppers well drained (75 g)
  • 1 teaspoon fresh lemon juice for brightness
  • 1 small clove garlic minced or grated (optional)
  • 1 tablespoon extra-virgin olive oil optional, for extra silkiness and drizzling
  • Freshly ground black pepper or red pepper flakes to taste
  • Fine salt only if needed (feta is already quite salty)

Method
 

  1. Add 1 cup of crumbled feta, 1/4 cup Greek yogurt, 1/2 cup roasted red peppers, 1 teaspoon fresh lemon juice, and the minced garlic (if using) into your food processor.
  2. Process the mixture for 30 to 60 seconds, stopping to scrape down the sides of the bowl to ensure even blending.
  3. While the processor is running, drizzle in 1 tablespoon of extra-virgin olive oil to enhance the texture.
  4. Taste the spread and add freshly ground black pepper or red pepper flakes. Adjust salt only if necessary.
  5. Transfer the spread to a serving bowl and refrigerate for about 30 minutes to allow the flavors to meld and the texture to firm up slightly.
  6. When ready to serve, give it a final drizzle of olive oil and enjoy with warm pita, veggies, toasted baguette, or as a sandwich spread.
