  2. Heat 1 tablespoon olive oil and 2 tablespoons butter in a large skillet over medium-high heat until the butter is melted and begins to bubble.
  3. Add the seasoned chicken breasts to the skillet and cook for about 5–6 minutes per side until they develop a golden-brown crust and reach an internal temperature of 165°F. Avoid overcrowding the pan; cook in batches if necessary.
  4. Transfer the cooked chicken to a plate and loosely cover with foil to keep warm.
  5. In the same skillet, add an additional tablespoon of butter. Once melted, add the thinly sliced onion and mushrooms. Sauté for about 5–7 minutes until the onions turn translucent and the mushrooms become golden brown and caramelized.
  6. Return the chicken breasts to the skillet, nestling them among the vegetables. Top each piece with 1 cup shredded mozzarella cheese and ½ cup shredded cheddar cheese.
