Method

  1. In a small bowl, combine 1 cup of low-fat mayonnaise, 3/4 cup cider vinegar, 2 tablespoons fresh lemon juice, 1 tablespoon freshly ground black pepper, and 1/4 teaspoon ground red pepper. Stir until fully incorporated to make the tangy white BBQ sauce.
  2. For each sandwich, spread about 1/3 cup of packaged angel hair coleslaw on the bottom half of a hamburger bun to provide a satisfying crunch.
  3. Top the coleslaw with approximately 1/2 cup of shredded rotisserie chicken. Drizzle about 2 tablespoons of the prepared white BBQ sauce over the chicken. If you love extra sauce, feel free to add more.

Notes

This recipe features pre-cooked rotisserie chicken and packaged coleslaw for convenience, making it perfect for busy weeknights. You can swap low-fat mayonnaise for regular mayo or even Greek yogurt for a lighter twist. The white BBQ sauce develops even more flavor when made ahead and stored in the fridge, and feel free to add jalapeƱos or hot sauce for extra heat. Serve with potato salad, sweet potato fries, or a fresh cucumber and tomato salad for a complete meal.
