  • 2 pounds halal beef stew meat or chuck roast cut into chunks
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder

  • 1/2 teaspoon paprika
For the Gravy:
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 1/2 cups halal beef broth
  • 3 tablespoons halal Worcestershire sauce
  • 1 tablespoon soy sauce optional for depth of flavor
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 2 tablespoons cornstarch
  • 3 tablespoons water to mix with cornstarch

Method
 

  1. Pat the beef dry with paper towels. In a bowl, toss the beef chunks with salt, black pepper, garlic powder, onion powder, and paprika until evenly coated.
  2. Heat olive oil in a skillet over medium-high heat. Working in batches, sear the beef for about 2-3 minutes per side until nicely browned. Transfer the browned beef to your slow cooker.
  3. Scatter the diced onion and minced garlic over the beef in the slow cooker. Pour in the halal beef broth, add the Worcestershire sauce and soy sauce, then sprinkle in the dried thyme and dried parsley. Stir gently to distribute the seasonings.
  4. Cover and cook on low for 7-8 hours (or on high for 4-5 hours) until the beef is fork-tender.
  5. About 30 minutes before serving, mix the cornstarch with water in a small bowl to form a slurry. Stir the slurry into the slow cooker to thicken the cooking liquid into a rich, luscious gravy.
  6. Serve the beef tips and gravy over mashed potatoes, egg noodles, or rice. Enjoy with a side of steamed or roasted vegetables and, if desired, buttery dinner rolls.
