- In a small bowl, combine 2 tablespoons of softened halal butter, 1 tablespoon olive oil, 2 minced garlic cloves, 1 tablespoon chopped fresh parsley, 2 tablespoons grated halal Parmesan cheese, and a pinch of salt. Mix until well blended.
- Spread the garlic butter mixture evenly on one side of each of the 4 slices of bread.
- Heat a skillet over medium heat. Place 2 slices of the prepared bread, buttered side down, into the skillet.
- Top each bread slice in the skillet with 2 slices of mozzarella cheese (or your cheese mix of choice).
- Cover with the remaining 2 slices of bread, this time with the buttered side facing up.
- Cook for about 3-4 minutes until the bottom turns golden and crispy. Carefully flip the sandwiches using a wide spatula and cook for another 3-4 minutes until the other side is golden and the cheese has melted.
- Remove the sandwiches from the skillet, slice into portions, and serve while warm.
