Method
- Grease a 9-inch square pan to prevent sticking.
- Place the Ritz crackers into a food processor and pulse until they become fine crumbs. Alternatively, seal the crackers in a ziplock bag and crush them with a rolling pin.
- In a large bowl, combine the cracker crumbs with the Skor English toffee bits. Pour in the sweetened condensed milk and mix until the mixture is thick and sticky.
- Press the mixture firmly into your prepared pan, ensuring an even layer that reaches all corners.
- Refrigerate the pan for at least 2 hours (overnight is even better) to allow the bars to fully set.
- Once set, cut into small squares and serve. The small size keeps portions rich and satisfying.
Notes
If you have difficulties finding the exact ingredients, try using digestive biscuits instead of Ritz crackers, or Heath bars in place of Skor bits for a slightly different toffee flavor. For an extra touch, add mini chocolate chips or drizzle melted chocolate on top after the bars have set. These bars can be made ahead of time and stored in the fridge, just be sure to let them chill long enough to firm up. They make an excellent treat for potlucks or a quick dessert when a sweet craving strikes.
