  • Ice

Cucumber Ginger Refresher
  • 5 cucumber slices plus extra for garnish
  • 1 oz fresh lime juice
  • 1/2 oz ginger syrup or 1 tsp grated ginger + 1/2 oz simple syrup
  • 3 oz non-alcoholic ginger beer
  • Club soda to top

Tropical Sunrise Mocktail
  • 2 oz pineapple juice
  • 2 oz orange juice
  • 1/2 oz fresh lime juice
  • 1/4–1/2 oz simple syrup to taste
  • 3 oz ginger ale or sparkling water
  • Ice
  • Orange wedge or pineapple frond for garnish

Method
 

  1. Berry Bliss Mocktail: In a sturdy glass, muddle 3/4 cup mixed berries with 2 thin orange slices until a saucy consistency develops and the oils from the orange are released.
  2. Add 1/2 oz fresh lime juice and 1/2 to 1 oz simple syrup (or honey) based on your sweetness preference.
  3. Fill the glass with ice, top with 4–5 oz lemon-lime soda or sparkling water, give it a gentle stir, and garnish with a mint sprig.
  4. Cucumber Ginger Refresher: In a tall glass, muddle 5 cucumber slices with 1 oz fresh lime juice and 1/2 oz ginger syrup (or 1 tsp grated ginger with 1/2 oz simple syrup) for 10–15 seconds to extract the cucumber’s essence.
  5. Fill the glass with ice, pour in 3 oz non-alcoholic ginger beer, and top with club soda. Stir gently and garnish with a cucumber ribbon or lime wheel.
  6. Tropical Sunrise Mocktail: In a shaker, combine 2 oz pineapple juice, 2 oz orange juice, 1/2 oz fresh lime juice, and 1/4–1/2 oz simple syrup with ice. Shake for 5–8 seconds to integrate the flavors and add a bit of froth.
  7. Strain the mixture into an ice-filled glass, top with 3 oz ginger ale or sparkling water, stir once gently, and garnish with an orange wedge or pineapple frond.
  8. Ginger Syrup (Optional): To make your own ginger syrup, simmer 1 cup water, 1 cup sugar, and 1 cup sliced ginger for 8–10 minutes. Let the mixture steep for another 10 minutes, then strain and chill. The syrup will keep for up to two weeks in the refrigerator.
