Ingredients

Ingredients
  • 1 box (15.25 oz) yellow or white cake mix
  • 2 large eggs
  • cup vegetable oil
  • 1 cup semi-sweet chocolate chips (or mix-ins of choice)

Equipment

  • Large bowl
  • Baking sheet
  • Parchment paper or cooking spray
  • Cookie scoop or Tablespoon
  • Wire rack

Method

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper or a light coating of cooking spray.
  2. In a large bowl, combine the cake mix, eggs, and vegetable oil. Mix until the batter is smooth and free of dry pockets.
  3. Gently fold in the chocolate chips until they are evenly distributed throughout the mixture.
  4. Using a tablespoon or a small cookie scoop, drop portions of the dough onto your prepared baking sheet, spacing them about 2 inches apart.
  5. Bake in the preheated oven for 10-12 minutes until the cookie edges are set and the centers remain slightly soft.
  6. Allow the cookies to rest on the baking sheet for 2-3 minutes before transferring them to a wire rack to cool.

Notes

These cookies are not only quick and easy to make but also incredibly versatile. Feel free to experiment with various mix-ins like nuts, white chocolate chunks, or even dried fruit. If you’re watching calories, try substituting half of the oil with applesauce. Store any leftovers in an airtight container to keep them fresh for days.
