Ingredients
  

Eggs
  • 12 large hard-boiled eggs peeled and chopped
Cream Base
  • 8 oz cream cheese softened
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup mayonnaise
Seasonings & Extras
  • 3 green onions finely sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika plus extra for garnish
  • Salt and black pepper to taste
  • 3 strips cooked turkey bacon crumbled; optional

Method
 

  1. Place the eggs in a pot and cover with water. Bring to a boil and cook for about 10 minutes until firm. Drain and transfer to cold water to cool, then peel and chop into bite-sized pieces.
  2. In a large mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise. Mix well until a smooth, lump-free base is achieved.
  3. Stir in the shredded cheddar cheese, finely sliced green onions, garlic powder, onion powder, smoked paprika, and season with salt and black pepper.
  4. Gently fold in the chopped eggs and, if using, the crumbled turkey bacon, taking care to maintain some texture of the egg pieces.
  5. Cover the bowl and refrigerate the dip for at least 30 minutes to allow the flavors to meld together. Before serving, sprinkle a little extra smoked paprika on top for garnish.

Notes

This dip can be made ahead of time, giving the flavors plenty of opportunity to meld and intensify. Experiment with substitutions like using Greek yogurt in place of cream cheese for a tangy twist or swapping cheddar for pepper jack to add some heat. Serve with crackers, toasted baguette slices, or crisp veggies for a versatile appetizer that will be the star at any gathering.
