Ingredients

Ingredients
  • 2 cups whole wheat flour
  • 2/3 cup Splenda granular sugar substitute
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 2 eggs
  • 1/4 cup butter
  • 1/4 cup applesauce
  • 1 tablespoon vanilla extract
  • 4 ripe bananas

Equipment

  • Large mixing bowl
  • Electric mixer
  • Loaf pan
  • Spatula
  • Wire rack

Method

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the 2 eggs, 1/4 cup butter, and 1/4 cup applesauce. Mix thoroughly until well blended.
  3. Add 1 tablespoon vanilla extract, 2/3 cup Splenda, and 1/2 teaspoon cinnamon. Use an electric mixer to blend the ingredients and create a smooth flavor base.
  4. Stir in 1/2 teaspoon baking soda and 2 teaspoons baking powder, then fold in the 4 ripe bananas. It’s okay if the batter remains a bit lumpy.
  5. Gradually incorporate 2 cups whole wheat flour into the mixture, ensuring even distribution without overmixing.
  6. Pour the batter into a prepared loaf pan, using a spatula to smooth the top.
  7. Bake for 60 to 65 minutes, or until a toothpick inserted in the center comes out mostly clean.
  8. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  9. Slice and serve warm or at room temperature. Enjoy your guilt‐free treat!

Notes

This guilt‐free banana bread recipe offers a healthier spin on the classic favorite by replacing sugar with Splenda and much of the butter with applesauce, while whole wheat flour boosts the fiber content. You can personalize it by adding chopped walnuts, sugar‐free chocolate chips, or even blueberries for extra texture. For a protein boost, try swapping applesauce with Greek yogurt. Best enjoyed fresh, it pairs wonderfully with a dollop of Greek yogurt or a drizzle of honey.
