  • 2 tablespoons butter
  • 2 pounds apples cored and diced
  • 1/2 teaspoon cinnamon

  • 1/4 cup light brown sugar

Method
 

  1. In a saucepan, melt 2 tablespoons of butter over medium heat. Add the 2 pounds of cored and diced apples and sauté for about 2 minutes until they begin to soften.
  2. Sprinkle in 1/2 teaspoon cinnamon, a pinch of nutmeg, 1/4 cup sugar, and 1/4 cup light brown sugar. Stir constantly for another minute to help dissolve the sugars.
  3. Pour in 1 1/2 cups water and add the juice of 1/2 lemon. Bring the mixture to a boil.
  4. In a small bowl, dissolve 1 tablespoon cornstarch in a little water to form a slurry. Whisk the slurry and 1 teaspoon vanilla extract into the bubbling apple mixture.
  5. Reduce heat and let the filling simmer for 15-20 minutes until the apples are tender but still hold their shape. Remove from heat and allow the filling to cool completely.
  6. Meanwhile, prepare the pie dough by sifting together 3 cups flour, 2 teaspoons sugar, 1 1/2 teaspoons salt, and 1/4 teaspoon baking powder into a mixing bowl.
  7. Cut in 6 tablespoons shortening until the mixture resembles coarse crumbs. Add 1 egg and about 3/4 cup milk, stirring until a smooth dough forms.
  8. Roll out the dough on a lightly floured surface and cut into circles. Spoon a portion of the cooled apple filling onto each circle and seal the edges.
  9. Heat oil in a deep fryer or large pan. Fry the pies in batches until golden brown on both sides.
  10. Remove the pies from the oil and let them drain briefly on paper towels. Dust with powdered sugar and serve immediately.
