Ingredients

For the Apple Cinnamon Ginger Mocktail
  • 1/2 cup ginger beer non-alcoholic; used in both versions
  • 1/4 cup apple cider
  • 1/2 oz fresh lemon juice 15 ml
  • 1/2 oz simple syrup or honey 15 ml
  • 1 small cinnamon stick plus extra for garnish
  • Ice for the cold version
For the Spicy Citrus Ginger Mocktail
  • 1/2 cup ginger beer non-alcoholic
  • 1/4 cup orange juice
  • 1/2 oz fresh lime juice 15 ml
  • 1/2 oz ginger syrup 15 ml
  • 2–4 jalapeño slices thin and seeded for less heat
  • Ice
  • Lime wheel for garnish

Equipment

  • Small pan
  • Glasses/mugs
  • Muddler
  • Stirring spoon

Method

  1. For the Apple Cinnamon Ginger Mocktail (Warm Version): In a small pan, gently heat the apple cider, lemon juice, and simple syrup (or honey) until the liquid is steaming but not boiling. Pour the heated mixture into a mug, add a cinnamon stick, and top with ginger beer to preserve its carbonation.
  2. For the Apple Cinnamon Ginger Mocktail (Cold Version): In an ice-filled glass, combine the lemon juice, simple syrup (or honey), and apple cider. Pour in the ginger beer and stir gently to maintain the bubbles, then garnish with a cinnamon stick.
  3. For the Spicy Citrus Ginger Mocktail: Lightly muddle 2–4 jalapeño slices with the fresh lime juice for about 10-15 seconds to release their oils. Add the orange juice and ginger syrup, fill the glass with ice, and stir. Top with ginger beer and finish by garnishing with a lime wheel.
  4. Taste and adjust each drink as needed, adding more sweetness, citrus, or jalapeño for extra heat. Serve immediately while the drinks are bubbly and refreshing.

Notes

These ginger mocktails are versatile non-alcoholic drinks that can be enjoyed warm or chilled. You can swap apple cider for pear juice if desired, and adjust the sweetness, tartness, or heat level to suit your taste. The recipes work beautifully for casual get-togethers or as a unique way to elevate a quiet evening. They also pair wonderfully with spicy appetizers or fresh, light snacks.
