  • 1 refrigerated pie crust 9-inch
  • 6 strips turkey bacon cooked and crumbled
  • 1 large sweet onion thinly sliced
  • 3 medium ripe tomatoes sliced, approximately 2 cups total
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup mayonnaise
  • 2 tablespoons chopped fresh basil or 1 teaspoon dried
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Preheat your oven to 375°F (190°C). Fit the 9-inch refrigerated pie crust into a pie pan and par-bake it for about 8 minutes to give it a head start.
  2. While the crust is par-baking, cook the 6 strips of turkey bacon in a skillet over medium heat until they are nice and crisp. Add a touch of oil if needed.
  3. Using the bacon drippings, sauté the thinly sliced large sweet onion in the same skillet until soft and golden, about 7 minutes.
  4. Allow the crust to cool slightly, then start layering: place half of the sliced tomatoes on the crust, followed by the sautéed onions and crumbled turkey bacon, and finish with the remaining tomato slices.
  5. In a bowl, mix together 1 cup shredded cheddar cheese, 1/2 cup shredded mozzarella cheese, 1/2 cup mayonnaise, 2 tablespoons chopped basil (or 1 teaspoon dried), 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Spread this cheesy mixture evenly over the layered ingredients.
  6. Return the assembled pie to the oven at 375°F and bake until the cheese is melted and beginning to brown, approximately 20-25 minutes.
