Method
- Place the frozen puff pastry on the counter and allow it to thaw at room temperature for approximately 30 minutes.
- Preheat your oven to 400°F and gather all ingredients and equipment.
- In a microwave-safe bowl, combine the unsweetened chocolate squares and margarine. Microwave on HIGH for about 1 minute until the margarine has melted, then stir until the chocolate is completely melted.
- Stir in the sugar until well combined. Then add the eggs and vanilla, mixing until the mixture is smooth. Finally, fold in the flour with a few gentle stirs, taking care not to overmix.
- On a lightly floured surface, roll out the thawed pastry into a 15×12-inch rectangle. Cut the pastry into 20 equal squares, each roughly 3 inches in size.
- Gently press each pastry square into the bottom of a muffin cup (using a standard muffin tin).
- Spoon approximately 1 tablespoon of the chocolate mixture into each pastry-lined muffin cup.
- Bake in the preheated oven for 15 to 20 minutes, or until the pastry edges turn a beautiful golden brown. The centers will remain soft for that perfect fudgy texture.
- Carefully remove the brownie cups from the muffin tin and let them cool on wire racks. If desired, dust with a light sprinkle of sugar before serving.
Notes
These fudgy brownie cups combine the best of both worlds: a crisp, flaky puff pastry exterior with a luscious, fudgy chocolate center. They are versatile enough to be served warm with ice cream or enjoyed as an indulgent treat on their own. Feel free to substitute butter for margarine, try adding your favorite mix-ins like nuts or chocolate chips, or even drizzle with caramel for a special twist. For the best texture, work with the puff pastry while it is still cool and enjoy them fresh.
