For the Sandwich
  • 6 slices turkey bologna thick-cut preferred
  • 4 slices sandwich bread white, wheat, or brioche
  • 2 tablespoons butter softened
  • 2 slices American cheese or cheddar
  • 2 tablespoons mayonnaise
  • 2 teaspoons yellow mustard optional
  • 4-6 pickle chips optional, for crunch

Method
 

  1. Spread 2 tablespoons of softened butter on one side of each of the 4 slices of bread. This layer of butter is essential for creating a gorgeous golden crust when grilled.
  2. Heat a skillet over medium heat. Place the 6 slices of turkey bologna in the pan. Allow them to cook for about 2-3 minutes until the edges begin to curl and crisp. If the slices puff up, score an 'X' in the center to help them lay flat. Flip and cook the other side until golden brown.
  3. Assemble the sandwich by first placing two slices of the fried bologna on the buttered side of one bread slice. Top with a slice of American cheese, then add two more cooked bologna slices. If using, add 4-6 pickle chips for extra crunch.
  4. Spread 2 tablespoons of mayonnaise and 2 teaspoons of yellow mustard on the inside of the top bread slice, then close the sandwich.
  5. Return the assembled sandwich to the skillet and grill until the bread turns golden brown and crispy, flipping once to ensure even cooking. This will also melt the cheese, creating a deliciously gooey interior.
  6. Let the sandwich rest for about one minute before cutting. This brief rest allows the melted cheese to set slightly, ensuring it doesn’t all ooze out with the first bite.

Notes

This fried bologna sandwich is highly customizable. You can switch up the bologna type or try a different cheese like pepper jack for a spicy kick.
