  • 1 kg Chicken pieces skinless, trimmed of fat
  • 1 Onion sliced
  • 1 packet French onion soup mix 45 g (or substitute with chicken noodle soup mix)
  • 1 can Apricot halves 840 g in juice
  • 125 g Green beans trimmed; use fresh or frozen
  • Flour optional, for dusting chicken if browning first
  • Noodles or potatoes for serving to soak up the sauce

Method
 

  1. Preheat your oven to 350°F (180°C).
  2. Place the chicken pieces in a large casserole dish, ensuring they are arranged with enough room for the sauce to envelop them.
  3. Evenly scatter the sliced onion over the chicken, then dust both the chicken and onions with the French onion soup mix.
  4. Pour the entire can of apricot halves, including their juice, over the ingredients in the dish. Do not stir; let the oven work its magic.
  5. Cover the casserole dish and bake for about 1 hour, or until the chicken is tender and cooked through.
  6. In the last few minutes of cooking, add the green beans to the dish and gently stir to warm them through.
  7. For a richer flavor, optionally dust the chicken pieces with a little flour and brown them in a lightly oiled frying pan before arranging them in the casserole dish.
  8. Serve immediately with your choice of noodles or mashed potatoes to soak up the delicious sauce.

Notes

This recipe is wonderfully versatile. If you can’t find apricots, try substituting with peaches, nectarines, or even pineapple chunks for a different sweet twist. You can also swap the French onion soup mix with chicken noodle soup mix if needed, and for a lighter version, opt for skinless chicken breasts instead of darker meat.
