Method
 

  1. Peel and prepare the fruits: cut the kiwi into bite-sized pieces, dice the mango, and slice the banana. Place all the fruit in a large bowl.
  2. Squeeze the juice of the lime over the fruit and gently toss to ensure even coating. This not only brightens the flavor but helps prevent the banana from browning.
  3. In each clear parfait glass, spoon in about a quarter of the fruit mixture as the base layer.
  4. Add a generous ½ cup of vanilla coconut milk yogurt over the fruit. Stir in ⅛ teaspoon of ground ginger into the yogurt for a subtle warmth.
  5. Sprinkle 1 tablespoon each of unsweetened dried shredded coconut and chopped macadamia nuts over the yogurt layer to add a delightful crunch.
  6. Repeat the layers with the remaining fruit, yogurt, coconut, and macadamia nuts to create a beautifully stacked dessert.
