Ingredients

Ingredients
  • 250g cream cheese softened (full-fat for richest flavor)
  • 2 cloves garlic crushed
  • 2-3 gherkin(s) finely chopped
  • Freshly ground black pepper to taste
  • Chopped nuts walnuts, pecans, or almonds (toasted for extra crunch)
  • Plastic wrap for shaping

Equipment

  • Microwave
  • Mixing bowl
  • Fork
  • Plastic wrap
  • Serving board

Method

  1. Soften the cream cheese by microwaving it for a few seconds until it's pliable but not melted, similar to room-temperature butter consistency. Transfer the softened cheese to a mixing bowl.
  2. Beat in the crushed garlic cloves and a generous twist of freshly ground black pepper using a fork until the mixture is smooth and the garlic is evenly distributed.
  3. Fold in the finely chopped gherkins until well combined.
  4. Prepare a sheet of plastic wrap by sprinkling a layer of chopped nuts on it in a rectangular shape. This will form the crunchy outer coating of your log.
  5. Spoon the cream cheese mixture onto the nut layer and, using the plastic wrap, form it into a cylindrical log ensuring the nut mixture sticks to all sides.
  6. Chill the log thoroughly in the refrigerator for at least a couple of hours, or overnight if possible, to let all the flavors meld together.
  7. When ready to serve, unwrap the log and arrange it on a serving board with your choice of crackers, toast triangles, or cucumber slices.

Notes

This cream cheese log is not only incredibly easy to prepare but also highly adaptable. Made ahead and served chilled, it’s perfect for parties or gatherings. You can experiment with substitutions such as swapping gherkins for finely chopped green peppers or adding fresh herbs like dill or chives. The full-fat cream cheese and crunchy, toasted nuts create an impressive presentation that rivals fancy cheese shop spreads.
