Ingredients

  • 2 sheets puff pastry
  • cups cranberry sauce
  • 1 triangle brie cheese 10-ounce; cut into 1-inch squares (rind is edible)
  • Non-stick cooking spray Optional, for greasing mini muffin tins

Equipment

  • Mini muffin tin
  • Oven

Method

  1. Preheat your oven to 375°F.
  2. Cut each sheet of puff pastry into 12 even squares, yielding 24 squares total. Press each square gently into the cups of a mini muffin tin, ensuring the dough covers the entire cup. Lightly spray the tin with non-stick cooking spray for easier removal if desired.
  3. Cut the 10‑ounce triangle of brie cheese into 1‑inch squares and place one piece into each pastry-lined cup.
  4. Top each with about 1 tablespoon of cranberry sauce, creating a vibrant contrast over the creamy cheese.
  5. Bake for 10–15 minutes, or until the pastry edges turn a light golden brown.
  6. Remove the tin from the oven and let the bites cool for a few minutes. Carefully remove each bite from the muffin tin and arrange them on a serving platter. Enjoy while the cheese is still warm and melty.

Notes

For added flair, consider sprinkling a few chopped fresh herbs or nuts over the cranberry sauce before baking. These bites work well with alternative cheeses like camembert, goat cheese, or even cream cheese if you desire a different flavor profile. Allowing the brie to reach room temperature prior to cutting makes the process easier, and leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
