Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together 1/4 cup softened butter, 3/4 cup brown sugar, and 1/4 cup unsweetened applesauce until the mixture becomes light and fluffy.
  3. Stir in 1/2 cup egg substitute and 2 1/2 cups mashed ripe bananas.
  4. In a separate bowl, whisk together the dry ingredients: 2 cups all-purpose flour, 1 teaspoon baking soda, 1/4 teaspoon salt, 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, and 1/4 teaspoon ginger.
  5. Gently fold the dry ingredients into the wet banana mixture, careful not to overmix to ensure a tender crumb.
  6. Pour the batter into greased mini loaf pans. You should get around 3-4 mini loaves depending on your pan size.
  7. Bake in the preheated oven for approximately 30 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
  8. Allow the loaves to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.

Notes

For substitutions, feel free to replace the egg substitute with 2 large eggs, or use a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water) for a vegan version. If you aren’t a fan of applesauce, Greek yogurt can be a great alternative. You can also experiment by adding chocolate chips, walnuts, or blueberries to create your own twist on this classic recipe. Adjust the spice blend as needed to suit your taste.
