Ingredients
  

  • 1 cup Cottage Cheese full-fat or low-fat
  • 1 Large Egg
  • 1/2 cup Shredded Cheddar Cheese or parmesan/mozzarella
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Onion Powder
  • 1/4 teaspoon Smoked Paprika
  • Salt and Black Pepper to taste
  • Optional Add-ins dried parsley, chili flakes, or everything bagel seasoning

Method
 

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or a silicone baking mat.
  2. In a blender, combine the cottage cheese, egg, shredded cheddar cheese, garlic powder, onion powder, smoked paprika, and salt and pepper. Blend until mostly smooth, leaving a slight texture for character.
  3. Use a spoon to drop 1-2 tablespoon-sized mounds of the mixture onto the baking sheet. Flatten each mound into a thin circle using the back of your spoon; thinner chips will result in a crispier texture.
  4. Bake in the preheated oven for 20-30 minutes. For softer, chewier chips, aim for around 20 minutes, and for extra crispy chips, bake closer to 28-30 minutes.
  5. Allow the chips to cool completely on the baking sheet before serving to ensure they firm up and achieve the perfect crunch.

Notes

This recipe is highly adaptable and perfect for experimenting with different cheese types and seasonings. Try swapping cheddar with mozzarella for a milder flavor or adding a dash of chili flakes for some heat. Enjoy these chips as a crunchy snack on their own, with your favorite dip, or as a unique topping for salads. Leftovers can be stored in an airtight container for up to two days.
