- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a small bowl, mix 2 tablespoons of softened cream cheese, 1 tablespoon powdered sugar, and 1 teaspoon non-alcoholic vanilla until smooth and creamy.
- Unroll the crescent roll dough and separate it into triangles.
- Place about ½ teaspoon of the cream cheese mixture in the center of each triangle. Top with 1–2 cherries (along with a little of the surrounding sauce) from the cherry pie filling. Be careful not to overfill, so the dough is easier to seal.
- Fold the corners of each dough triangle over the filling and pinch the edges to seal. A little filling peeking out creates a charming, rustic look.
- Place all the assembled bites on your prepared baking sheet. Brush the tops with 1 tablespoon melted butter and, if desired, sprinkle with 2 tablespoons coarse sugar for a bakery-style finish.
- Bake in the preheated oven for 10–12 minutes or until the bites turn a perfect golden-brown.
- If you’re using the optional glaze, mix ½ cup powdered sugar with 1–2 teaspoons milk while the bites are cooling, then drizzle the glaze over the top.
