Method
 

  1. Preheat your oven to 425°F.
  2. In a large bowl, toss the cubed russet potatoes with olive oil, garlic powder, onion powder, smoked paprika, chili powder, ground cumin, salt, and black pepper.
  3. Spread the seasoned potatoes evenly on a parchment-lined baking sheet, ensuring they are not overcrowded. Roast in the preheated oven for 25–30 minutes, flipping halfway through for even browning until a crispy exterior forms.
  4. While the potatoes are roasting, heat a skillet over medium-high heat and brown the ground beef or turkey. Once the meat is no longer pink, drain any excess fat. Stir in the taco seasoning and water, and simmer until the liquid reduces to a saucy consistency.
  5. Transfer the roasted potatoes to an oven-safe dish. Top evenly with the taco meat, then sprinkle the shredded cheese over the entire dish.
  6. Return the dish to the oven just until the cheese melts into a gooey blanket.
  7. Serve hot, allowing everyone to customize their portion with sour cream, chopped green onions or cilantro, and any optional toppings like diced tomatoes, jalapeños, or avocado slices.
