  • 1 can pineapple chunks 20 oz/565 g, drained
  • 1 can cherry pie filling 21 oz/595 g
  • 1 can mandarin oranges 15 oz/425 g, drained
Creamy Component
  • 1 cup Halal sour cream 240 ml
Textural Add-ins
  • 1 cup mini marshmallows 90 g
  • 1 cup sweetened shredded coconut 120 g
  • 1 cup chopped pecans or walnuts 120 g (optional)

Method
 

  1. In a large mixing bowl, combine the drained pineapple chunks, cherry pie filling, and drained mandarin oranges. Gently fold until the fruits are evenly distributed.
  2. Add the Halal sour cream to the fruit mixture and fold lightly until all fruit pieces are uniformly coated.
  3. Mix in the mini marshmallows, sweetened shredded coconut, and, if using, the chopped pecans or walnuts.
  4. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, allowing the flavors to meld and the marshmallows to soften.
  5. Serve chilled in individual bowls or cups.

Notes

This versatile fruit salad is highly adaptable for any occasion. You can swap the Halal sour cream for Greek yogurt for a tangier twist, or replace the cherry pie filling with fresh berries during the summer months. Nuts can be omitted or substituted with chopped chocolate to accommodate allergies. Prepare ahead and store in the refrigerator for up to three days, although it’s likely to disappear much faster once served.
