  • 2 teaspoons apple pie spice
  • 4 eggs, beaten
  • 1 (21 ounce) can apple pie filling
  • 1 cup applesauce
  • 1/2 cup packed brown sugar for the batter; save the remaining for topping
  • 2/3 cup cooking oil

Method
 

  1. Preheat your oven to 350°F. Grease and flour two 8x4x2-inch loaf pans.
  2. In a large bowl, whisk together 2 1/2 cups packaged baking mix, 1/2 cup all-purpose flour, and 2 teaspoons apple pie spice.
  3. In a separate bowl, combine 4 beaten eggs, a 21-ounce can of apple pie filling, 1 cup applesauce, 1/2 cup brown sugar (for the batter), and 2/3 cup cooking oil.
  4. Pour the wet ingredients into the dry ingredients and stir just until everything is moistened. Resist the urge to overmix to ensure a tender texture.
  5. Divide the batter evenly between the prepared loaf pans.
  6. Sprinkle the remaining 1/4 cup brown sugar and 1/2 cup chopped walnuts evenly onto the batter in each pan.
  7. Bake for about 55 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the loaves to cool in the pans on a wire rack for 10 minutes. Then carefully remove and let cool completely.
  9. For best results, wrap the completely cooled bread and let it rest overnight before slicing. This allows the flavors to meld and the texture to set.
